Prefer IMAP when you read mail on more than one device. It keeps everything in sync (and supports IDLE for instant delivery). POP3 downloads mail to a single app; it suits older software and download-and-keep workflows.
Most clients auto-discover these settings from just your address, thanks to the optional autoconfig DNS records shown on each domain's page.
